Full recipe below! 👇🏽🔥 - 1. Start with the tuna. Use whatever you like here. 1.5 cans should be plenty for 2 sandwiches depending on the size of your bread 2. Drain excess brine or oil, then add to a large bowl 3. You can get creative with the fillings here. I added: half a stick finely diced celery, half a diced spring onion, half a diced shallot, bunch of chopped dill, parsley and chive, 1tsp chopped piri piri chillies, 1tsp chopped pickled jalapeños, 1 diced pickle. Add all this to the bowl 4. Season with sea salt, black pepper and a squeeze of lemon juice, then add 2-3tbsp kewpie mayo, 2-3tbsp hot sauce and optional 1tsp wholegrain mustard - mix till thoroughly combined and adjust seasoning to taste 5. Slice two thick pieces of sourdough and liberally spread over some salted butter - I used @allthingsbutter__ 6. Place down your cheese of choice. Gruyère, cheddar, Edam, whatever you like - make sure there’s something mature in there, then add a scoop or two of your tuna mixture and lightly spread over to cover the base 7. Add another few pieces of cheese here - I used Red Leicester and Edam, then place over the other buttered slice of sourdough 8. Bring a skillet up to med-high and add in a knob of butter. Once melted, place in your sandwich and press down to ensure flat, then cover with a lid to steam 9. Leave to toast and melt for 4-5 mins, then remove the lid, lift up the sandwich, place down more butter and flip. Add the lid back and leave the other side to gently toast 10. Remove from the heat and leave to rest for 3-4 mins, then slice your sandwich in two and enjoy! - A very simple but very delicious sandwich. Lots of things to play with here, from the mix of different fillings, to the types of cheese, to the bread. As always, go with your favourites and adjust to taste.
