Ingredients: 1 pound boneless, skinless chicken breasts, thinly sliced 1 tablespoon olive oil 1/2 onion, chopped 1 can (15 oz) pineapple chunks, drained 1/4 cup soy sauce 1/4 cup honey 1/4 cup rice vinegar 1 clove garlic, minced 1/4 teaspoon red pepper flakes (optional) 2 cups cooked rice Instructions: Cook chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned. Remove from skillet and set aside. Sauté onion: Add onion to the skillet and cook until softened. Add pineapple: Stir in pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using). Combine: Return chicken to the skillet and toss to coat.
