It is nor Spanish rice. You guys are always giving me a hard time about not washing my rice and this rice is not supposed to be rinsed. We're going to follow the instructions on the back which say two cups of liquid per bag and we have two bags. So, we're going to do an entire container of chicken broth and the rice also called for one tablespoon of vegetable oil per package. So, we're going to add two tablespoons. Now, I have one can of drained black beans. We're just going to put this here. This is going to be a delicious Mexican rice and bean casserole. It's so easy. We're going to grab our mixing bowl. We're going to put on our latex gloves. We're about to handle some raw chicken and we're going to need some gloves here. We have two large chicken breast. I'm going to get my kitchen scissors here and just trim these up. This is so much easier than getting a cutting board and knife dirty. You can trim off some of the fat and just throw that away. You don't need to rinse your chicken. I just patted mine dry with a paper towel. This is seriously such an easy dish. It's great any night of the week. Now, we're just going to cut up our second chicken breast again into bite-sized pieces. Once all of your chicken breast is cut up, we're going to grab one container of taco seasoning. I love this Taco Bell Taco Seasoning. We're just going to go right on top of our chicken and the easiest way to mix this up is just get your hands in there and get every piece of chicken coated in that delicious taco seasoning. Now, we're going to dump this into our broth and rice mixture here. Just get it all dropped in on top. We're going to go ahead and take our gloves off. We're going to use our little spurtle and just get all that chicken submerged. You want to make sure that rice is fully covered so it can absorb all of that chicken broth. Now, we're going to add one sixteen ounce jar of your favorite salsa. This is a chunky on-the-border brand salsa. We're just going to go right on top like that. Now, you can cover with foil or if you have a lid for your casserole dish, go ahead and put that on. Our oven is preheated at 375 degrees. We're going to throw this in for about 45 minutes til that rice is cooked and we're going to add some toppings. Alright, after 40 minutes. Our rice is fully cooked. Our chicken is done and that looks beautiful. We are going to grab some of our spicy queso blanco and we're just going to drizzle about a fourth of a cup on top here. This thing is going to be cheesy and amazing. Now, we're just going to get our and we're just going to mix up that cooked chicken and cooked rice to make sure you scrape the sides and just give it little mixture there. We're going to add a little bit more queso on top and then the crown jewel is our Mexican blend shredded cheese. We're going to put about two cups over the whole thing here and I like spicy so my half is going to get some jalapeno wheels. My wife doesn't like spicy so I'm going to leave those off of her half but we're going to throw this back in the oven uncovered for about 10 minutes. Come back and serve. Alright, after 10 minutes, our casserole is completely done. Our cheese is melted. This thing smells amazing. We're just going to get in here. You guys always give me a hard time for eating from my wife's side but I'm making to get the jalapeno side. Look at how good that looks you guys. Our rice is fully cooked. Our chicken is fully cooked. Absolutely delicious. Let's try it by. Mm. That is so good. You gotta try this.

So you can take those quarter biscuits and that's going to be your dumplings but I know some of y'all out there insist on having everything be fresh and homemade and if you're able to do that then I think that's wonderful so you could also make this from scratch pick the veggies from your garden and make the dough from scratch and you can use the same recipe make your own versions of those canned soups you don't have to follow this exactly you can modify however you like I know Mary she likes to watch our video but she gets mad at us because she says, why don't I ever make anything from scratch? Well, I like to give you options. I like to show you how you can do it in a quick and easy version and also let you know that you can modify it and make it from scratch as well and we're going to add one more dusting of thyme on top of those biscuits which will become our dumplings and then this gets cooked for another 45 minutes on high and then it's going to be time to taste test. We're going to do one block of softened cream cheese. And a generous dollop of daisy sour cream. Now, we're just going to mix this all together until we have a nice filling for our delicious enchiladas and just want to mix until everything is combined. Alright, once that is mixed up, you bring over your flour tortillas and these are the fajita-sized tortillas softened. I've microwaved them for about 30 seconds. Now, we're just going to put a nice, generous scoop directly into our tortilla. If I can get it, there you go. Gonna fold the sides and give it a nice roll and we're going to make about eight to 10 of these enchiladas we're just going to line them in our greased nine by 13 casserole dish alright and you guys this is done in such a quick amount of time you have dinner for the whole family in literally an hour alright we put the last one oops we put the last one into our casserole dish and look at that we have eight perfectly now we're going to make our sauce we're going to do one can of red enchilada sauce and we're going to do half a can of heavy whipping cream and this is going to make a nice, delicious pink enchilada sauce just like that. Give it a quick mix with our spoon and look at that color change you guys. Nice and creamy. We're going to pour this directly over the top of our enchiladas. Wanna make sure all of our enchiladas are covered completely. If you missed any spots, you can just take your spoon, spread it around. On top of that, we're going to do even more Mexican cheese. I'd say about another cup. Just like that. Our oven is preheated to three fifty. We're going to pop these in for about 30 minutes until that cheese is melted and everything is cooked through. Alright, it's been 35 minutes and our creamy cracked chicken enchilada our delicious bubbly, melty cheese. Everything is cooked through. That sauce looks delicious. Steam it hot. Just Dump and Bake: Cheesy Chicken and Rice with Broccoli 😍 | Just Dump and Bake: Cheesy Chicken and Rice with Broccoli 😍 | By Brain Food | You're just going to pour two cups of white rice directly into your greased casserole dish. I'm using jasmine rice because that's what we love here but you can use regular white rice. You can use anything you like. On top of that, you're going to add two cans of cream of chicken soup. I have the family size here so I only need one and you're just going to go directly on top of that rice there. Then, we're going to take some chicken broth. I'm using low sodium here but you can use whatever you like and we're going to fill up half of that can with the chicken broth and just pour that directly on and we're going to give everything a nice, good mix. We want to mix in that broth with that cream of chicken soup with that rice and this is the perfect dump and bake recipe. It only takes a few minutes of prep time and your family is going to absolutely love it. Now, we're going to take about two and a half pounds of chicken breast. You can use full chicken breast. You can use chicken tenders, whatever you like. If you're going to use a large chicken breast, I like to score the top with chicken to give it those nice marks. It's going to help it cook beautifully. Going to season our chicken, a little bit of salt, a little bit of pepper, little bit of garlic powder, and Italian seasoning. Now, you take your washed broccoli and you can use frozen broccoli. You can use fresh whatever you like. If you're going to use fresh, this is just such a nice life hack. You just use scissors to cut these florets and just put em all over here. This is going to be so quick and easy you guys and I'm just going to push this broccoli down into our cream here and that looks so good. Now we're going to get one packet of onion soup mix. This is going to make it taste so good and we're just going to pour this over everything. Make sure you get some on that chicken, on the broccoli, on the rice. Look at that you guys. This is going to be so incredible. We're going to cover this with aluminum foil. Put it into a 350 degree oven for 1 hour. Then we're going to take it out of the oven, uncover it, and add some delicious cheese. Alright, it's been an hour and Everything smells wonderful. Let's take a look. Look at how good that looks. Everything is cooked perfectly. We're going to go ahead and add some delicious shredded cheese on top. We're going to do about a cup and a half. Get everything covered in this cheese. We're going to throw this back in the oven uncovered for about five minutes just to melt that cheese on top and we'll come back and dive right in. Alright, our cheese is bubbly. This thing is done. Look at that you guys. We're just going to grab a nice piece of chicken here and look at how good that looks. Wow. Get that cooked rice, little bit of broccoli. Alright, let's try it out and there you have it, our cheesy chicken and rice bake is done. Everything is cooked perfectly. We're just going to grab a nice, juicy bite of chicken here.
