In a large pot, combine the watermelon rind cubes and water. Bring to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 10 minutes until the rinds are tender. 2. Drain the watermelon rind cubes and set them aside. 3. In the same pot, combine the granulated sugar, lemon juice, and lemon zest (if using). Stir until the sugar dissolves. 4.
