This sourdough focaccia recipe has a light and soft interior and a deliciously crispy exterior. This combination of textures in this sourdough focaccia comes from an airy sourdough-leavened dough that’s coated in a generous amount of olive oil. While it bakes, this olive oil crisps up the outside of the dough. This gives the best crispy crust which contrasts so well with the airy interior and chewy crumb.

I used a basic focaccia recipe and added kimchi, but if you don’t feel like this Korean twist is for you, feel free to substitute with your favourite olives. I personally love the crunch of kimchi though! — • Ingredients: • - 500g strong bread flour • - 2 tsp salt • - 2 tsp instant yeast • - 1 tsp granulated sugar • - 400ml warm water • - A few tbsps of olive oil • - 1 tbsp semolina or polenta • - 100g kimchi, roughly chopped • - 2 slices of bacon • - Handful of spring onions, roughly chopped
