Jennifer LaRose on Instagram: "Mexican Chicken Salad By: Jen Fox Ingredients 2 cans chicken or 2 shredded chicken breasts 1/2 cup red bell pepper 1/2 cup corn 1/2 can black beans 1/2 cup queso fresco 1/2 of an avocado Chopped cilantro 1 cup greek yogurt 1 package taco seasoning Lime juice Directions Cube chicken into 1” pieces (if using canned, skip this step). Dice bell pepper and combine bell pepper, corn, beans, and queso with cubed chicken. Make the sauce by combining yogurt, taco seasoning and lime juice. Pour sauce over chicken and stir until chicken and veggies are coated with sauce.
