Lima - Ricotta Polenta with Drunken Meatballs 🛒 Ingredients For the Meatballs 1 lb ground beef (450 g) 1/2 cup breadcrumbs (60 g) 1/4 cup grated Parmesan cheese (25 g) 1 large egg 2 cloves garlic, minced 1/4 cup fresh parsley, chopped Salt and pepper to taste 1 tbsp olive oil (15 ml) For the Drunken Sauce 1 tbsp olive oil (15 ml) 1 medium onion, thinly sliced 2 cloves garlic, minced 1 cup dry red wine (240 ml) 1 cup beef broth (240 ml) 1 tbsp Worcestershire sauce Salt and pepper to taste Fresh parsley, chopped, for garnish For the Ricotta Polenta 4 cups water or chicken broth (1 liter) 1 cup polenta or cornmeal (160 g) 1/2 cup ricotta cheese (120 g) 1/2 cup grated Parmesan cheese (50 g) 2 tbsp butter (30 g) Salt and pepper to taste 📋 Directions Make the Meatballs In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, parsley, salt, and pepper. Mix until just combined. Form the mixture into small meatballs (about 1 inch in diameter). Cook the Meatballs Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides, about 5-7 minutes. Remove the meatballs from the skillet and set aside. Prepare the Drunken Sauce In the same skillet, add another 1 tbsp of olive oil. Sauté the sliced onion until softened and lightly caramelized, about 5 minutes. Add the minced garlic and cook for another minute. Pour in the red wine, beef broth, and Worcestershire sauce. Stir well, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and add the meatballs back to the skillet. Cover and let simmer for 10-15 minutes, until the sauce has reduced and the meatballs are cooked through. Season with salt and pepper to taste. Make the Ricotta Polenta While the meatballs are simmering, bring 4 cups of water or chicken broth to a boil in a saucepan. Gradually whisk in the polenta. Reduce the heat to low and cook, stirring frequently, until thick and creamy, about 15-20 minutes. Once the polenta is cooked, stir in the ricotta cheese, Parmesan cheese, butter, salt, and pepper. Mix until smooth and creamy. Serve Spoon the ricotta polenta onto plates or into bowls, creating a well in the center. Place the drunken meatballs on top, spooning the sauce over them.
