Soy flour cake  (lower carb, hi protein)    160 g soy flour  2 tsp baking powder  100 g brown sugar  300 g apples (one large apple), peeled, cored and chopped  4 egg whites  2 tbsp plan soy yogurt    Blend fruit/eggs, add to flour, baking powder, sugar, yogurt, stir well.    Bake 45 mins at 325 (cook soy flour low & slow)    Optional: Sprinkle top w/confectioner's sugar.
