Derek Chen on Instagram: "Peach Mango Pie Ingredients * 1 cup mangoes * 1 cup peaches(fresh or from jar) * 4 tbsp sugar * 2 tbsp corn starch+2 tbsp water(for filling) * 1 tbsp lemon juice * 1/2 tsp salt * Puff Pastry dough * 2 egg whites * 1 tbsp cornstarch+2 tbsp water(for glaze on top of pie) Instructions 1. Combine mangoes and peaches with sugar and simmer until soft and they start to release their juices(8-10 minutes). 2. Mix cornstarch and water and pour that into the mangoes and peaches. Simmer for 3-5 minutes until thick. 3. Add lemon juice and salt and place the filling in a separate bowl to chill in the fridge for a few hours. 4. Roll out puff pastry and cut it into 4 inch by 4inch squares.
