Here's the recipe; - Dry out the pork belly in the fridge overnight to remove any excess moisture. - Slice the pork belly in to thin strips. - Into a large bowl, add 1 cup tapioca starch, 1 tbs garlic powder, 1 tbs onion powder, 1 tsp smoked paprika and 1 tsp chilli flakes. Mix well. - Add the pork belly strips into the flour mix. Then add 4 egg whites over the top. - Mix with your hands until the batter has fully combined on the pork. - Add frying oil to a large pan and set over high heat. - Once the oil has come up to temp, gently add the pork belly strips to the oil and fry on both sides for 3-4 min. - Remove and dr
