Ingredients • 1 cup white balsamic vinegar • 1/2 cup sugar • 1 pound assorted radishes Method • Slice radishes very thin (use mandolin if you have one, it's making it easier). Place sliced radishes in a bowl and set aside. Combine vinegar and sugar in a small pot and bring to a boil, stirring occasionally, until sugar is dissolved. Pour hot liquid over the radishes and let it cool, then transfer to a jar and store in the fridge for later use. • Serving suggestions: tacos, sandwiches, pita, salads, rice bowls, tuna bowls, tea sandwiches, toast, etc.
