571K views · 35K reactions | MIDDLE EASTERN MEAT STUFFED PITAS These are meat stuffed pitas called Arayes - think of them like a super flavorful middle eastern meat pocket. I dipped them in my easy homemade white sauce and added pickled red onions and fresh parsley. You will be hooked. You can make these super thin, in which case you can do it right on your stove. But if you want a lot of meat, you’ll need to finish them off in the oven till cooked through. Here is how I made them: 1. We’ll start by mixing 1lb ground lamb (or ground beef, or a mixture) with a couple generous pinches salt and pepper, 1 tbsp smoked paprika, 1 tbsp sumac, 1/2 tsp coriander, 1/2 tsp all spice. Those are the dry spices. Then add 3 tbsp fresh parsley, 2 minced garlic cloves, & 1/2 onion finely grated (or processed). Mix well, then let sit for a few mins so the flavors soak up nicely. 2. Grab your fav pita and cut it into halves or quarters. I used a lowcarb pita.Open the pita, then place 1-3oz meat inside and press down against the top and bottom. You can make these however thick you want, it all depends on your preference. If making them thicker, just know you’ll want to finish them off in the oven till cooked through. 3. Bring a pan to medium heat. Add 1-2 tbsp neutral oil (or spray). Add the stuffed pitas and cook for 3-3.5 mins on each side, till they get nice & crispy & cooked through. If you went with thicker pitas, place them into the oven in an oven safe rack for 8-10 mins at 400F to finish off. 4. I dipped these in a homemade white sauce made by mixing 1/2 cup plain thick greek yogurt, 2 tbsp mayo, 1 minced garlic clove, 2 tbsp fresh finely chopped parsley, the juice of half a lemon, a generous pinch salt & pepper. Give it a good mix, taste and adjust. 5. When the pitas are done, remove from the oven, garnish with fresh chopped parsley, some pickled red onions, and as much sauce as you want.
