Sorry @jonfavreau that there’s no frozen cylinder of ganache, but here’s how I made it: (adapted from Jean-Georges recipe)
- 200g (7oz) dark chocolate 70+% cocoa (I used @ghirardelli ) 
- 6 tbsp butter
- 40g brown sugar + 40g sugar (some extra for ramekins) 
- 2 large eggs 
- 2 egg yolks
- 1g salt 
- 2 tbsp (18g) ap flour
- 1 tsp (3g) cocoa powder 
- 2 tbsp gochujang (you can add another 1-2 tsp if you prefer spicier)
- Garnish: powdered sugar, ice cream, and/or flaky sea salt

1. Preheat oven to 425F. Butter three 8oz ramekins thoroughly, then coat them with sugar (flour also works if you prefer)
2. Melt the chocolate with butter and salt in microwave on 15 sec blasts til fully melted. Mix in the gochujang.
