Ingredients
Meatballs:
• 1 lb ground Turkey mine was 93% lean
• 1 large egg
• 1/2 cup almond flour
• 2 garlic cloves minced
• 1/2 tsp dried oregano
• 1/2 tsp garlic powder
• 1/2 tsp kosher salt
• 1/2 tsp black pepper
• Olive oil
Soup:
• 1/2 yellow onion diced
• 2 carrots chopped
• 2 stalks of celery chopped
• 4 cloves garlic minced
• 6-8 cups chicken broth
• 1/2 tsp dried oregano
• Pinch of red chili flakes optional
• 1/2 cup dry Orzo arcini de pepe, rice, or any small pasta you’d like!
• 1 tbsp fresh parsley chopped
• 1 tbsp fresh dill
• 2 cups fresh spinach
• 1 lemon juiced
• Freshly grated Parmesan cheese to top
• Kosher salt & pepper to taste
