Bossam recipe pork belly

Suyuk is a Korean term for boiled pork traditionally made after making kimchi. Bossam is a way to eating pork by wrapping it in salted cabbage.

This is a melt in a your mouth umami flavour-bomb of a dish. Tender pork belly coated in a sweet, salty and spicy glaze, wrapped up in a fresh leaf with some kimchi and pickled radish.

Bossam is proof that Koreans do wraps right: each perfectly constructed packet features meltingly tender pork, fermented dipping sauces and pastes, crunchy preserved vegetables, and more, all in a cabbage-leaf wrapper.

Featuring rich pork belly layered with spicy radishes and wrapped in lightly pickled cabbage leaves, bossam is often enjoyed during kimjang, when Koreans gather to make enough kimchi to last all year. It can be topped with different condiments, but this version features ssamjang, a thick and spicy sauce commonly paired with pork, plus crispy garlic slivers that add a pop of flavor and crunch.
