Salad: 1/2 iceberg lettuce 70g Salami 2 slices mozzarella Finley slices (50g_ 70g Chickpeas ( 1/2 can roughly) Finely grated parmesan cheese ( 15g) 90g artichoke heart DRESSING I didn’t make too much dressing as I’ve made this salad every day for the past week And IMO this was enough 2tbsp olive oil 2 tbsp red wine vinegar 1 tbsp dijon mustard 1/2 tsp salt 20g Parmesan Blitz well so its nice and creamy serves 2 If the dressing is too thick just add a tsp of water until you get the consistency you like.
