Recipe ⬇️ INGREDIENTS 2 lemons for zesting ¼ cup lemon juice 1 1/3 cups granulated sugar ½ cup extra virgin olive oil 3 eggs 1 cup smooth ricotta cheese 2 cups all purpose flour 2 tsp baking powder ½ tsp baking soda ¼ tsp salt Glaze ½ cup icing sugar 2 tbsp lemon juice INSTRUCTIONS 1. Zest 2 lemons into a large bowl. Squeeze enough juice to make ¼ cup. 2. Add sugar, oil, eggs and ricotta cheese and whisk until smooth. 3. Add flour, baking powder, baking soda and salt and whisk until all is combined. Pour into a 9” springform pan sprayed with vegetable spray. 4. Bake at 350 F for about 30 –
