Homemade Pasta 2 cups all purpose flour • 3 large eggs • 1/2 tsp salt 1/2 tsp olive oil Place flour on a clean surface and form a hill. Use a small ramekin and press down in the middle and form a well. Add the salt, eggs and olive oil. Use a fork to gently beat the eggs while slowly incorporating the flour from the edges into the center. Once the dough starts to roughly form into bits and pieces, use your hands to mold and shape it until it comes together. Knead the dough until smooth and form into a ball. Approximately 7-10 minutes. The dough should feel dry and hard. If the dough feels overly dry and cracks after a few minutes then dip your fingers in water and knead again.
