Now that I've figured out how to get it perfect, I can't stand ABC anymore 😆 First off, this is not my recipe and I'm not trying to take credit for it. This recipe (or the ratios, at least) comes from @sugargeekshow. She has a whole blog post and video about it, and even has a handy little slider on her site so you can scale up or scale down. However, it's pretty straightforward: 1 part pasteurized egg whites (I use 16 ounces), 4 parts powdered sugar (I use 4 pounds), and 4 parts butter (again, 4 pounds - I like half salted, half unsalted).
