I am so impressed with these keto pancakes! I topped my husband’s with peanut butter and diced strawberries, I just topped mine with Kerygold. We do breakfast for dinner once a week and this really completed the meal. Mix 4oz cream cheese, 4T coconut flour, 4 eggs, 1T vanilla, 2t baking powder, and pinch of cinnamon in a large bowl. Cook in a nonstick pan on medium high heat until bubbles begin to form and then flip. Continue cooking until middle is done. Yields about 6 good sized pancakes.

Tested: Keto Italian Cream Cake: This is an amazing cake. It's one of the keto desserts I made for Christmas and it was devoured. Made nearly exactly the way of the classic, only changing the ingredients for low carb, sugar free, gluten free lifestyle. I used sour cream instead of greek yogurt and lowered the amount of coconut to keep it lower carb. Also used pecans instead of walnuts because of taste preference. Will be making again!
