If they had a child together, this is how I think they’d make their stew. Perfect for a romantic dinner for two by candlelight, or holiday party for 30 as my brother and I did here, 3-5 hours in a low oven will create an unctuous, rich and lush melt in your mouth umami bomb. Ingredients 2 pounds marbled chuck, cubed 1 large yellow onion, diced 3 vibrant carrots, diced 3 stiff celery stalks, diced 6 fat cloves of garlic, minced Handful bacon, diced, double smoked is nice 3 bay leaves Several twigs of thyme 1 bottle good red wine, not that cooking wine swill Extra virgin olive oil Kosher sea salt, lots Cracked pepper Directions Snow salt your beef well. Brown beef on high in olive oil, remove. Sweat all vegetables for full ten minutes over low- medium heat to release water. Drop beef back in, pour in red wine and bring to boil to cook off alcohol. Add thyme, bay leaves, salt and pepper and slide into 300f oven, covered. Cook for at least 3 and ideally five hours for melt in your mouth goodness. Serve over thick sliced, pan sauteed vegetable mirepoix or mashed potatoes, or orzo, or risotto, or whatever you love scooping up with rich sauce. Bon Appétit!
