But I did swear to make my wife actually enjoy French onion soup. She hated it and I wanted to right the wrong.

French onion soup is easy — it’s all down to using great caramelised onions. But the issue is they take time. You can burn them in a second so you’ve to stand over them for about 80 minutes to do them right. So here is 80 minutes per dish as a hack that takes 1 minute prep using the oven. Set on 120° and you’re good.

- in a skillet on medium/low heat, sauté 1 large sliced white onion in olive oil and 1 tbsp butter. Stir frequently and allow to reduce for 45-50 mins. About half way through, add 2 cloves minced garlic, 1 tbsp white wine, 1/2 tbsp balsamic vinegar, and 1 tsp fresh Thyme, salt and pepper
- Add 8oz raw pasta of choice (i used ditalini) and 3 cups of beef broth until pasta is covered. Also add 1 tsp or Worcestershire. Mix and cover with a lid and allow pasta to cook, stirring occasionally
- Once al dente add 1/4 cup heavy cream and mix. Add 1/4 cup Gruyère and mix. Add pasta to ramekin and Raw Pasta, Thyme Salt, French Onion Soup, White Onion, Fresh Thyme, Onion Soup, French Onion, Beef Broth, Tag Someone Who
