Simply sandwich two mini tortilla wraps with grated cheese, add breakfast toppings (I went for beans, cheese, hash browns bites, bacon & an egg), then air fry or bake in the oven until the egg is cooked through & cheese melted 🤤. Yum! Recipe (serves 1): 🍳 Grate 30g cheese of your choice. Scatter 20g of the cheese over a mini tortilla wrap, then add another mini tortilla on top. 🥓 Spoon over 1 heaped tbsp warmed baked beans, leaving a gap in the centre for the egg. 🧀 Add the remaining grated cheese, then add any other breakfast toppings of your choice - I added cooked hash brown bites & 20g diced cooked bacon. It would be easy to cut this recipe in half though. I ate a leftover piece for lunch today with a little bit of fresh salsa.
