Smoked Chuck Roast Chili is my 'Lotsa Meatsa’, super heavy on meat, very thick, light on beans version of chili. It has a deep, complex flavor from Guinness Stout, bacon, traditional chili spices, cocoa powder, and smoke. You don't need a smoker to make it, but it is made on a barbecue grill.
Ingredients
Meat
• 1/2 cut into strips 1 pound bacon
• 4 lbs Chuck, roast
Produce
• 15 oz Beans, red
• 15 oz Black beans
• 1 tbsp Chipotle chili, powder
• 6 cloves Garlic
• 3 Jalapenos
• 2 cups Onion
• 15 oz Pinto beans
Canned Goods
• 4 cups Beef stock
• 1/4 cup Tomato paste
Baking & Spices
• 1 tbsp Ancho chili powder
• 1 tsp Cayenne pepper
• 1 tbsp Cocoa powder
• 2 tbsp Kosher salt
• 1 tbsp Paprika, smoked
Nuts & Seeds
• 1 tbsp Cumin
Beer, Wine & Liquor
• 1 pint Guinness stout
Other
• 48 ounces diced tomatoes and their juices
