Ingredients - 1 small head green cabbage, chopped into 1-inch pieces (about 8 cups) - 4 tablespoons extra-virgin olive oil, divided - 1/4 teaspoon salt - 2 tablespoons grated Parmesan cheese - 2 tablespoons rice vinegar - 1 1/2 teaspoons reduced-sodium soy sauce - 1 teaspoon Dijon mustard - 1 large clove garlic, grated with a Microplane - 1/4 teaspoon ground pepper, plus more for garnish Directions 1. Position oven racks in top third and lower third; preheat to 425°F. Toss cabbage with 2 tablespoons oil and salt in a large bowl until well coated. An easy side dish that’s fresh, colorful and always gets rave reviews. So great for make-ahead lunches and cookouts!⁣ Enjoy it warm or cold! Ingredients ▢½ pound of uncooked orzo ▢1 bell pepper diced into bite-sized pieces ▢1 large zucchini diced into bite-sized pieces ▢½ pint of cherry tomatoes halved ▢1 small red onion cut into bite-sized pieces ▢1 tablespoon of olive oil ▢Salt and pepper to taste ▢¼ cup of good quality olive oil ▢2 tablespoons of red wine vinegar or balsamic vinegar I used balsamic ▢½- 1 teaspoon of flaky sea salt to taste ▢Optional: chopped fresh herbs I love a small handful of fresh basil in this! ▢Optional squeeze of lemon juice Instructions 1. Preheat the oven to 400 degrees F. Prepare a large baking tray (I like to line mine with a silicone mat or parchment paper). 2. Cook the orzo pasta according to package directions. Once done, drain and set aside. If you’d like to serve the pasta salad cold, you can run the pasta under cold water to cool it down. 3. Meanwhile, place all of the veggies on the baking tray so that everything is spread out evenly. Drizzle with 1 tablespoon of olive oil and lightly sprinkle with salt and pepper. Gently toss to coat. 4. Roast in the oven for 15-20 minutes, flipping halfway, until the veggies are fork tender. I like mine to still have a little crunch to them but if you want them softer, you can bake for a few more minutes. 5. Once the veggies are done, combine them in a large bowl with the cooked orzo. Drizzle on the ¼ cup of olive oil as well as the vinegar, optional herbs, and additional salt. Toss to coat everything and ENJOY! Notes Store this veggie pasta in an airtight container in the refrigerator for up to about 3 to 4 days. It’s delicious eaten hot or cold, so feel free to dig in straight from the fridge or warm it up a bit in the microwave! One bunch of asparagus. We're going to drizzle this with a little olive oil. Alright and then we go season this with salt. And pepper. So y'all this is an amazing side dish for the holidays or for any day I really like making this my family always likes it when I make it alright so we're just going to give this a little mix there's little peppercorns jumping around but that's alright make sure your asparagus is nicely coated in the olive oil alright just like so alright next y'all what we going to do here I have some shaved parmesan cheese so we're going to take some of this and we're just going to put it like right down the middle, alright? Right down the middle because we want those stems sticking out because they're pretty and that's it. Right down the middle. So, y'all can use this, you know what y'all, I always just eyeball this dish. I use one bunch of asparagus and I probably use about half a bag of this cheese. So, about four ounces of cheese or so. Alright, our next step here y'all. I have some grape or cherry tomatoes. I always get it mixed up. So, we're going to put olive oil on top of here and then I'm also going to use I have this garlic lover seasoning y'all I actually don't have any fresh garlic which is crazy I thought I bought some but I didn't so I'm improvising but if y'all want to use fresh garlic you can but it's easy just a little garlic or this seasoning and mix it up with your cherry or grape tomatoes alright nice and easy it's a beautiful fun it even has Christmas colors y'all and my cat's dish as a special special I don't know what okay anyways I'm just going to shut up alright so now I'm going to put this on top like so Look, I'm trying to put em in the middle but it's kind of just like wherever they fall, alright? Like so. Alright, y'all. So, we're going to put this in the oven at 350 for about about 15 minutes or so and whenever you y'all can tell when the asparagus is done and then we take it out of the oven. We have one more step. Y'all look at how cute he is. He was sleeping. Of course, I always wake him up to be in my movies. Look at his little paw resting on my arm. You're a little baby. Look how cute you are. You're like, mom, I want to go back to sleep in the sunbeam. They love seeing you though baby. You're their favorite sous chef on the internet. Yeah. He's so cute y'all. Mwah. Okay. Back to sleep little baby. Alright y'all so here we have our asparagus with Parmesan cheese and roasted tomatoes. I ended up cooking this for about 15 minutes or so. So we have one more step before we serve it. Um I have some balsamic reduction. Uh y'all can actually make your own of this if you want but I didn't feel like it. So we just going to drizzle it right on top like so. Alright and then we also going to finish it with a little fresh basil so for your holiday whatever family gatherings and stuff you can just serve this right in the dish just serve it with some tongs and let people help themselves so yeah you want to know what y'all Imma serve myself I'm just going to take one of these asparagus asparagus is asparagus how do you say that what's the plural of asparagus asparagus I'm just going to eat it like this Mmm y'all it's so good.
