Simple, using only 3 ingredients, these pistachio frozen yoghurt cups are the perfect snack (or dessert) this summer! They taste great as is (IMO), or with an additional touch of fun, if you’d prefer them sweeter! 🍫✨ 
Here’s what you’ll need (makes ~6-8 depending on the size of your muffin cases):

INGREDIENTS:
👉500g greek yoghurt
👉100g pistachios
👉1-2 tbsp honey/mail/alt (as desired)

Optional:
Chocolate of choice, melted (to serve)
Additional chopped pistachios (to serve)

*please note: I soaked my pistachios before filming this recipe, however, I have tried & tested both soaked and un-soaked versions of this recipe and didn’t find much of a difference in terms of taste/texture, the main thing is that you use a quality/strong blender.

METHOD:
1. In a blender, or using a hand-held blender, blend together the pistachios, Greek yoghurt, and honey/maple/alt. Blend until smooth.
2. Transfer the mixture into silicone muffin cases and freeze until set (~3-4 hours).
3. Optional to serve dipped into melted chocolate +/- additional crushed pistachios. Enjoy ♥️

Soft Sandwich Bread 2 Cups Whole Milk 1 Cup Water ½ Cup Butter 8 Cups Bread flour 6 Tablespoons Honey ( or sub sugar) 2 Teaspoons salt 9 Teaspoons Yeast (yes, it’s a lot— but this makes two big loaves in less than a 2.5 hours— worth it!) (Optional) For the Top of the Loaves 2 Tablespoons Melted Butter Warm the milk, water, and butter to 110° either in a saucepan or microwave. In a stand mixer or big bowl, combine 7 cups of bread flour, honey, salt, yeast and mix for about thirty seconds. Gradually add the luke warm liquids to the dry ingredients. Knead on a slow speed (or by hand) for about a minute, then gradually add remaining flour. Watch for the dough to cling to the dough hook, but this is a wet dough and I *always* have to finish it by kneading on the countertop. It will be sticky - resist the urge to add more flour or your loaves will be dry and crumbly. After the dough has kneaded, place it in a greased bowl to rise in a warm location for about thirty minutes to an hour, until doubled in size. Shape the dough into loaves and place in 2 greased bread pans. Pour melted butter over the top. Cover loosely with a tea towel and let rise in a warm place, free from draft, for about 20-30 minutes. The bread will dome over the pan when it has risen fully. Preheat the oven to 350°. Once the oven is heated, place the bread in the middle racks and bake for about 55 minutes. The bread will be golden brown when done. I’ve noticed that it takes almost ten minutes longer to bake when I’m using a tall-sided ceramic baking dish, FYI. Set the loaves (still in the pans) on a wire rack for 10 minutes before removing from pan. Let cool before slicing. Enjoy! My kids have all gone through phases of loving and hating zucchini slice. A great option to make on the weekend and pop into lunchboxes throughout the week, drastically cutting down the lunch prep time. The perfect recipe for this time of year when zucchinis are in season and you’re looking to simplify your meals. Ingredients: 1 onion, diced 2 bacon rashers, fat trimmed and diced 2 medium zucchini, grated and excess moisture squeezed out 1 carrot, peeled and grated 1 cob of corn, kernels removed 100g tasty or cheddar cheese, grated 50g feta, crumbled 1 tbs flat leaf parsley, finely chopped 2/3 cup SR flour 5 eggs 1/4 cup milk Salt and pepper Method: 1. Preheat the oven to 180°C and line a 20cm x 25cm slice tray with baking paper. 2. Heat a medium sized frypan over medium heat. Once hot, add the onion and bacon and cook, stirring occasionally for ~ 5 minutes. 3. Once the zucchini has been grated remove excess moisture by placing into a sieve and squeeze/press the zucchini into the sieve. Quite a lot of moisture will come out. 4. Place zucchini, carrot, corn, herbs, cheeses and flour into a large bowl and mix. Add the bacon and onion and mix. 5. Crack the eggs into another bowl, add the milk and salt and pepper and lightly beat. 6. Add the egg mix to the vegetable mix and mix well to combine. 7. Pour into prepared tray and top with slices of tomato and bake for ~35 minutes or until it bounces back when touched lightly. 8. Allow to cool slightly before cutting into squares. 1 cup (100g) ground almonds 1 cup nuts (about 125g) (I used cashews and almonds) 
½ tsp sea salt, optional Topping ingredients: 100g dark chocolate 2-3 tbsp desiccated coconut and flaked almonds 1️⃣ Add the desiccated coconut to a large frying pan and fry until lightly brown and toasted. 2️⃣ Add the coconut and all the other base ingredients to a food processor and blend until thoroughly combined. Add a tbsp or 2 of water if needed if it won’t come together. 3️⃣ Press down into a lined 20cm square tin and put in the fridge. 4️⃣ Melt the chocolate, pour on top of the base and sprinkle over the coconut and almonds (I fry these too so they are golden brown colour). This is our copycat version of a Larabar / Nakd Cashew Cookie Bar, made with just two ingredients: dates and cashews! Suitable from 18 months 🌱 Makes 18-24 large bars INGREDIENTS: 350g of raw cashews 350g of pitted medjool dates Optional: 1/4 tsp of sea salt HOW TO: 1. Add the raw cashews to a food processor and blend to a fine crumb to remove chunks. 2. Add the dates and then blend until a sticky ball comes together (you may need to stop and scrape over a few minutes). 3. Press the mixture into a lined dish (we used a 10”x10” size but you can make this bigger and have thinner bars) either using a spatula or place a piece of cling film over the top to press flat with your hands (leave on), then place in the fridge to cool/set for 1-2 hours before slicing into whatever sized bars or bites you like. 4.
