Just grab some lumpia wrappers, a couple ripe burro bananas, a bottle of langka aka jackfruit, and some brown sugar and that’s all you need for this deelish dessert. Here’s a tip, after separating the wrappers, dice the banana and langka rather than slicing them, I hate biting into a hunk of hard uncooked banana, and coat it all with brown sugar. Fill the wrappers, roll the ends tight, tuck in the sides, and repeat until you end up with a nice tight fatty that’s ready for a sizzling hot oil bath. Once both sides are nicely browned, sprinkle some brown sugar on top to give it that extra caramelized crunchy sweetness. I like to add ice cream or whip cream, and a little Island

But I used pork chops with the nice fat cap and skin along the edge. There’s nothing subtle about this dish. A delightful combination of tangy, sweet, savory, peppery garlicky flavors braised in a potion of soy, calamansi, citrus, garlic, sauce then topped with an ungodly amount of delicious onions rings. I also added some fried potatoes like my moms used to do. Serve it over a bed of fluffy white rice - and it’s magic for your mouth. Cut your spam into 7 or 8 rectangles and cook for 2 mins on each side before pouring your spam musubi sauce which is 2 TBSP soy sauce and 1.5 TBSP sugar). Cook this until concoction thickens 2. Then assemble your musubi. I used a mold but you can use the can the spam comes in if you don’t have a mold. 3. then coat your spam in eggs and then panko. This might not be as popular as some other Filipino dishes which is why I wanted to highlight it. The key to making a good pinakbet is making sure you’re not overcooking your vegetables. I used Trader Joe’s pork belly that was already cooked but you can totally use raw pork belly. Make sure to brown it and cook in the chicken stock for about 30-40 minutes before adding in the Kalabasa (squash). You can also omit the pork belly completely if that’s more your speed. This recipe its giving me Filipino ratatouille vibes, anyone else? Lami kaayo!😋 Ingredients: 2 cups rice flour (non-glutinous) 3/4 cup sugar 2 tsp instant yeast 1/2 tsp salt 400ml coconut milk Directions: -In a large bowl, combine rice flour, sugar, instant yeast, and salt. Mix until well-combined. -Add coconut milk, whisk until smooth. Cover and let it rest for 1 hour. -Meanwhile, wipe the banana leaves to remove the dirt, then quickly heat over the stove for a few seconds. -Line the molds with banana leaves. Trim the excess leaves around the edges. -After 1 hour, remove the cover then pour the batter into each molder up to 3/4 full. -Bake in a preheated oven at 200C for 20 minutes
