Breanna Stark on Instagram: "Once you stop overcooking your ribs, you’ll never go back 💯 The key to a great rack of ribs is for them to pull off the bone with ease and have a nice, clean bite. This is my favorite way to smoke a perfect rack every time. 1. Pull off the membrane - this will help you get a clean, perfect bite. 2. Add a binder - mustard, olive oil, whatever you like 3. Layer your rubs - I like to start with a pork rub with some sugar & spice, then add a layer of coarse ground salt & pepper on top to build a great bark. 4. Smoke at 225°F for about 2 hours and give them a spritz with apple juice halfway through. 5. Wrap them in foil with a bit of squeeze butter, brown sugar, and breakfast syrup. Then throw them back on for another hour or until the bones stick out 1/4”.
