Greek Zucchini Salad
It's a raw zucchini salad that's packed full of so much flavor you won't even realize you're eating zucchini! Our Greek Zucchini Salad is a fresh, easy-to-make salad that has everything you love about a Greek salad but made with thinly sliced tender fresh zucchini!
20min · 8 servings     Recipe  • 8 oz block feta cheese  • 8 oz cream cheese, room temperature   • 1/4 cup labne or greek yogurt  • 1 cup grated mozzarella cheese  • 1/4 cup water, or milk, or heavy cream  Directions   • Add all the ingredients to a food processor. Pulse until smooth and creamy. Add to a 8-10 inch round skillet, bake at 350 degrees for 20-25 minutes or until hot.  Marinated Olives-  • 1 cup chopped kalamata   • 1 cup green olives   • 4 cloves garlic, finely grated   • 1/2 cup fresh parsley  • Juice of 1/2 lemon  • 1 tsp dried oregano,   • 1/4 cup olive oil  • 1-2 tsp crushed red pepper, to taste  Mix everything together in a bowl. Set aside for 20 minutes. Top over hot feta.
