Italy is made up of 20 regions, each with its own regional cuisine. When it comes to pasta there are many shapes and recipes which are particular to a specific region. Some of them are popular throughout Italy, and even abroad (like tagliatelle bolognese which comes from Emilia-Romagna!). Others are mostly only cooked and eaten in the region where they were invented.
