Ingredients: • Bell peppers (red, orange, yellow), sliced • Poblano pepper, sliced • Roma tomatoes, halved • Yellow onion, sliced • Chicken, sliced • Olive oil (evoo) • Taco seasoning • Garnish: avocado, lime, fresh cilantro Instructions: 1. We transferred it to disposable pans and put it in the fridge because we made it Saturday night, for Sunday dinner. Bigdufus’s Killer Spanish Rice 1½ cup white rice ¼ cup oil ½ cup white onions, diced 1 clove garlic, minced Brown rice in oil. Add onion and garlic. Sauté until onions are soft. Recipe: 1 Lb Ground Pork 2 tablespoons of fresh minced garlic 2-teaspoons salt 8-10 NM Chile Pods(cleaned and seeded) 1/2 an onion 3 garlic cloves 1 teaspoon dried Oregano 1/4 cup all purpose flour 4 cups water Garlic salt to taste (or use your favorite seasoning) Procedure: 1️⃣ In a pot on medium heat with olive oil, brown off the pork and add the salt and garlic. 2️⃣ Meanwhile, in a separate pot add the clean and seeded chile pods, onion, garlic cloves and 4 cups of water and bring to a simmer. 3️⃣ After simmering for a few minutes, add mixture to a blender with half the water and puree until smooth and add the oregano and a couple teaspoons of salt. 4️⃣ Once pork is browned, add the 1/4 cup of flour and stir to cook
