Jamie | Fit in a Foreign Land on Instagram: "Let’s have lunch! Sweet potato noodles with red bell pepper, rainbow chard & chicken sausage. Easy, healthy, veggie heavy lunch. Heat 2 Tablespoons avocado oil in a pan over medium/ medium high heat. Sauté sweet potato noodles with kosher salt, black pepper, onion & garlic powder, cumin and chipotle pepper for 5-8 minutes or until golden brown and cooked through. Remove to plate. Add more oil if needed, add bell pepper and cook 2-3 minutes. Add green onion and cook until softened. Add chard to pan and sauté until wilted. Remove serving to plate.
