In medieval times, they used a very basic idea — let’s throw stuff at the castle — and invented very effective ways to do it using an invention called the catapult.

Replica of a Roman Catapult. A catapult is any siege engine which uses an arm to hurl a projectile. The Roman version was called an onager. Projectiles included both arrows and (later) stones.

Mangonel.
The Springald was a smaller version of the Ballista used in tighter confines such as castles or towers. Each arm is attached to a spring made of tightly wound tensile material, usually animal sinew or horse hair. The rope is pulled back by a system of gears and pulleys, which causes the arms to bend back against the tensile material. When the trigger is pulled, the rope is released and the arms snap back into place, rapidly propelling the projectile forwards towards the target.
This wonderfully detailed papercraft catapult is the work of Polish modeler, Mariusz Grzywacz. The model which is at 1:125 scale is one of several free samples offered by the commercial paper model company, Renova. The PDF template for the catapult can be obtained here.

Mangonel.
A mangonel was a type of catapult or siege engine used in the medieval period to throw projectiles at a castle's walls. A mangonel had poorer accuracy than a trebuchet (which was introduced later, shortly before the discovery and widespread usage of gunpowder). The mangonel threw projectiles on a lower trajectory and at a higher velocity than the trebuchet, with the intention of destroying walls, rather than hurling projectiles over them.
