I will say this tastes more like an ice cream sandwich to me than a s’mores… but either way it’s amazing. INGREDIENTS - 12 graham crackers 1/2 cup dark chocolate chips 1/2 tsp coconut oil 1 tub light cool whip 1 1/2 scoops vanilla protein powder (45g) DIRECTIONS - 1) In a microwave-safe bowl, combine the chocolate chips and coconut oil. 2) Microwave in 30-second intervals, stirring between each, until fully melted and smooth. 3) Place half the graham crackers on a parchment-lined baking sheet lined all up beside one another. 4) Using a spoon or spatula, spread an even layer of the melted chocolate on the crackers. 5) Place the tray in the freezer for 10-15 minutes, or until the chocolate is set. 6) In a medium-sized bowl, combine the Cool Whip and protein powder. Mix thoroughly until the filling is smooth and well-incorporated. Can also just mix the protein powder right into Cool Whip container (just gets messy). 7) Remove the graham crackers from the freezer. Spoon the protein filling onto the chocolate-covered crackesr. Gently top with a plain graham cracker, pressing lightly to form a sandwich. 8) If desired, dip one edge or corner of the assembled s’mores into more melted chocolate for an extra decorative touch. 9) Return the assembled s’mores to the parchment-lined baking sheet and place them in the freezer for at least 1 hour, or until firm. 514 reactions · 126 shares | chocolate yogurt protein cake • Follow @mattsfitchef for healthy protein recipes SAVE the recipe👇 INGREDIENTS For the best result follow the measurement in grams Dry ingredients - 70 g (3/4 cup) oat flour (or any flour) - 40 g (1/2 scant cup) almond flour (or more oat flour) - 45 g (1/2 scant cup) protein powder (I recommend @legion casein (discount code MATTSFIT) or vegan protein powder) - 30 g (1/3 scant cup) cocoa powder - 1 1/2 tsp baking powder - a pinch of salt - chocolate chips Wet ingredients - 200 g (3/4 cup) Greek yogurt (or any yogurt) - 120 to 150 ml (ca. 1/2 cup) milk of choice (see notes*) - 70 g (1/3 cup) maple syrup (or honey) - 1 tsp vanilla extract DIRECTIONS - Heat oven to 180 Cº (350 Fº) and fold a 20 cm (7.9 inches) loaf pan with parchment paper. - In a bowl add yogurt, maple syrup, vanilla extract, cocoa powder, salt and stir until smooth. - Add to the bowl oat flour, almond flour (or more oat flour), vegan protein powder and baking powder. Stir to combine while gradually adding milk - start with 120 ml (1/2 cup) and add up to 150 ml milk if the batter is still too dry. Based on the protein powder you are using you will need to adapt with more oat flour if batter is too liquid OR more milk if batter is too dry. - Fold in chocolate chips and give a stir. - Transfer batter to loaf pan and bake in hot oven for 30 to 45 min (mine took 37 minutes). - Let cool before serving and keep stored in the fridge for a maximum of 3 days. NOTES - For the softest texture and best flavor, I recommend @legion chocolate casein (discount code MATTSFIT) or vegan protein powder. Why tends to dry the cake. - Based on the protein powder you use you will need to adapt with more oat flour if the batter is too liquid OR more milk if the batter is too dry. Protein Packed PB Chocolate Snickers GF, DF INGREDIENTS * 2 cups dates * 1 cup smooth peanut butter * 1/4 cup cacao powder * 1/2 cup peanut butter, for the middle * 1 cup chocolate chips (I use TJ 72% dairy free chocolate chips) * 1 tsp coconut oil * 2 tbsp peanut butter Add the dates, PB and cacao powder to a food processor and whizz until combined. (Do this 1/2 at a time). Transfer it to a lined 8 x 8 baking dish and press down evenly, then cover with the 1/2 cup of peanut butter. Melt the chocolate and coconut oil in a bowl over a saucepan with an inch of water in on a low heat, stirring gently, then mix in the 2 tbsp peanut butter and pour this over the PB layer.
