Ingredients
See the recipe card for full information on ingredients and quantities.
- Unsalted Butter: Select a good brand of unsalted butter and ensure it is at room temperature before mixing.
- Caster Sugar: Sift the sugar to remove any excess lumps and dirt.
- Eggs: Ensure the eggs are at room temperature for easy mixing.
- Self-Raising Flour: Sift the flour to remove lumps.
- Unprocessed Cocoa Powder: Choose high-quality cocoa powder for the best flavor, and sift it to remove lumps.
- Baking Powder: Check that the baking powder hasn’t expired; this ensures the proper cake rising.
- Milk: Use full-fat milk at room temperature.
Chocolate Buttercream
- Unsalted Butter: Ensure the butter is at room temperature to ensure the ingredients mix properly.
- Powdered Sugar (Confectioner’s Sugar): Sift the icing sugar to achieve a smooth and creamy consistency.
- Melted Chocolate: Use good-quality dark or milk chocolate to give the frosting with rich chocolate flavor.
- Cocoa Powder: Choose the richest, darkest cocoa powder available. Dutch-processed cocoa powder works well due to its deep color and flavor.
- Liquid (Milk or Cream): Use any liquid to achieve the desired consistency. Personally, I prefer using cream.
- Twix bars: Purchase 4-5 packs of Twix bars and place them around the rim of the cake.
- Caramel: To fill the cake.
- Whipped cream: To decorate the top of the cake.
Tips and Substitutions
- Chocolate cake: It is very important to let the cakes cool completely before frosting them with buttercream, as this will prevent the frosting from melting.
- Caramel Filling: The thick caramel filling is a key component, so make sure you select good-quality caramel or make it from scratch.
- Room Temperature: Before starting the recipe, ensure that the butter, eggs, and milk are at room temperature.
- Batter: Mix the cake until the ingredients are combined to avoid overworking the gluten in the batter, as this will result in a denser cake.
- Vanilla: If you want a less chocolatey cake, swap the chocolate cake layers for vanilla. You can also get creative and decorate this cake however you like.
- Frosting: If you are not a fan of chocolate buttercream, you can frost the cake instead with this crowd-pleasing chocolate ganache.
