Miso Honey Apple Crumble
It’s comfort season, and crumble is ranked pretty highly on my list of dishes that soothe. Historically I’ve shied away from the straight apple variety because, frankly, they err on the dull, but this doozy of a recipe with miso and honey brings an umami sweetness that tantalise your tastebuds and keep you coming back for more.
The Essential Chocolate Birthday Cake
I call this “The Essential Birthday Cake”, because this is just the recipe that you need in your armoury for an easy one bowl, no equipment celebration cake, light enough to take icing, but decadent enough to enjoy with a dusting of icing sugar and for a simple teatime treat.

Roasted Apricots, Pistachio & Whipped Feta Toast
Basically all you need to do is cut a thick slice of your favourite sourdough, toast it well, schmear it generously with some whipped feta, labeneh or ricotta (really the tart dairy of choice is yours), lay over some of those delicious honey thyme roasted apricots (or peaches or plums which can be roasted in exactly the same way), top with some roughly chopped toasted pistachios for crunch. And devour (usually standing up with apricot jus trickling down your chin).
Apricot Crumble Bars
These bars, stuffed with honeyed thyme roasted apricots with a hint of cinnamon and vanilla are my summer staple and replace the cranberry and rhubarb versions that appear in the cooler months. Roasting the apricots brings a jammy soft texture but not overpowering sweetness which ensures their fresh tart flavour doesn’t dull in the baking process.

Those Pump Street Bakery Flapjacks
On first glance I know these might appear as a simple oat-y snack. But trust me, with their deeply addictive caramelised chew-y goodness, these flapjacks (with an optional chocolate drizzle) are the unsung heroes of the Pump Street Bakery cabinet.

Cocoa Nutties
There is nothing quite like the combination of coconut and chocolate to transport you back to a love of childhood candy bars. Cocoa nutties are a bar that do just that. A thick set layer of chocolate on the bottom, topped with a buttery, almondy, coconutty, chewy, golden macaroon like cake that melts into pieces of joy in your mouth.
