No-Bake Energy Balls 2 cups rolled oats 1 cup dried cherries ½ cup ground flax seeds ½ cup ground chia seeds 1 cup organic creamy peanut butter 2/3 cup honey 2 tsp vanilla Combine all ingredients and form into balls. (I used an ice cream scoop, and it made about 2 dozen of that size.) Arrange on cookie sheet, cover with foil and freeze one hour to set. (I just leave them in the freezer, then when you put them in a lunch box for later, they will be just the right softness to eat. But they don’t have to stay in the freezer.) Sometimes I add unsweetened shredded coconut, but I wasn’t sure if all the kids would like coconut. Also, make sure the chia and flax seeds are ground, not whole, or they will probably fall apart.
