He’s the master at this lamb dish and I’m so honored to have him share it with all of you 💛 I picked up these beautiful lamb shanks at @mr.kosher818 Ingredients: •4 lamb shanks about 5 pounds •1/3 cup oil •3 large onions •about 6 golden potatoes •3 carrots •3 celery ribs •2 tbsp. paprika •1 tbsp. black pepper •2 tbsp. Salt •about 6 minced garlic cloves •about 6 dried bay leaves Directions: * Rinse and pat dry the lamb shanks. Remove any excess fat. * Season both sides of each lamb shank with salt and pepper, massaging the seasoning in. * Heat oil in a large braiser or oven-safe pan over medium heat. * Add chopped onions to the heated oil and fry until slightly darker than golden brown. * Place lamb shanks on top of the onions, allowing them to release their juices and flavors. Sear on both sides, flipping occasionally. * Cover the lamb shanks with water and sprinkle seasonings on top. Taste and adjust seasonings if needed. * Add chunks of potatoes, carrots, and celery on top, covering the lamb shanks. * Cook for about 1 hour on low to medium heat. * Remove from the stove and cover with parchment paper and foil to prevent contact with toxins. * Preheat oven to 350°F (175°C) and place the covered pan in the oven for about 2 1/2 hours. * In the last half hour, remove the foil and parchment to allow the shanks to brown. * Serve and enjoy!
