They are also readily available in most grocery stores. Macoun – A variety native to New England and perfect for pie. It’s a cross between the ‘McIntosh’ and ‘Jersey Black’ cultivars. Sweet, slightly tart and perfect for pie. McIntosh – Sweet and tart. It also tends to break down when it cooks. Honeycrisp – Sweet, firm, and great apple flavor. This combination of flavor and texture is great for pie. INGREDIENTS NEEDED 5 medium/large apples Granny Smith & Macoun 3 tablespoons unsalted butter 2 tablespoons brown sugar ¼-1/2 cup granulated sugar 2 tablespoons lemon juice 1 tablespoon cornstarch 1 teaspoon ground cinnamon ¼ teaspoon ground nutmeg Homemade pie crust or biscuit dough INSTRUCTIONS Make apple pie filling – Let it cool completely. You can even make this a few days ahead of time to save time! Cool completely – It’s very important to let pie filling cool completely before assembling hand pies. If you put hot pie filling inside the pie dough it will melt it. Make pie dough – Prep and put in the refrigerator to chill for a few hours or overnight. Roll out pie crust – Roll out biscuit dough or pie crust on a lightly floured surface, into 4-6 inch ovals. Fill with cooled pie filling – Scoop about 1 tablespoon or so of the cooled filling in the center of each round. Seal pie crust – Fold over, lightly press down on the filling, trim and crimp edges with a floured fork. (If a little pie filling leaks out, toss a little flour on it!) Place on sheet pan – Place hand pies on a half sheet pan lined with parchment paper. Chill – Refrigerate or freeze for later. (Our preferred method is to freeze pies right away! This prevents pie filling from leaking and chills the pie dough well.) Fry or bake – They can be either fried or baked in the oven. (4 Bars) High Qual Dark Chocolate (I use 72% - 78% dark), roughly chopped▪️Maldon Sea Salt▪️ 1️⃣ Preheat the oven to 350°F. 2️⃣ Sift (or mix) flour, baking powder, and salt together. 3️⃣ In a separate bowl, beat together butter (slightly softened), brown sugar, and granulated sugar for 2-3 minutes. 4️⃣ Beat in eggs and vanilla, and then scrape down the bowl. 5️⃣ Gradually add flour mixture to the butter mixture, and beat until well blended. 6️⃣ Roughly chop the chocolate and then add to the cookie dough, stir to combine. 7️⃣ With a heaping 2 oz. scoop, drop cookies onto parchment paper lined sheet pans 3 inches apart to give room for expansion. In a medium pot, we add 3/ 4 cup of white sugar. If you don't have white sugar, you can add brown sugar. I'll leave that up to you. On medium heat, we stir constantly until it completely melts. Before I forget, I'd like to know which country you're watching this recipe from. So, I can give you a shout in the next video. Guys, it's very important to stir continuously as it can stick and burn. Once it has fully melted, we lower the heat to a minimum. Now, we add two tablespoons of butter. We turn off the heat and remove the pot. In a large pan or pot, we add enough water. We place the entire pot where we prepared our milk caramel. We stir constantly. This is to cool it down quickly. Remember, this step is done without heat. As we only need cold water to cool down our milk caramel or dulce the leche. As we continue stirring, it will begin to thicken. Once it's ready, we remove it and serve it on a small plate. Look how delicious it turned out. You can pair it with whatever you like. Dolce the leche or milk caramel is a traditional dessert in Latin American countries. It's thick and has a texture similar to custard. It's a kind of caramelized milk and is used to compliment other desserts like cakes, pancakes, ice creams, etcetera.
