I love good ‘ol cheesy loaded traditional nachos just as much as the next person (trust me, ask my husband 😂), but I can’t be eating those every day!

So when the nacho craving hits and I want something a little healthier, I make these. They truly are SO GOOD. Instead of tortilla chips, you use bell peppers. I used mini bell peppers because they’re the perfect size, but you can use regular bell peppers, too. Just make sure you cut them wide enough to hold all the toppings.

INGREDIENTS:
-6 large bell peppers (I did 2 yellow, 2 red, and 2 green)
-1 lb ground beef or ground turkey
-2 tbsp taco seasoning
-3/4 cup canned and drained black beans
-3/4 cup canned and drained corn
-1 jalapeño diced (optional)
-1 cup Mexican shredded cheese

DIRECTIONS:
-Preheat oven to 375°F and line a large baking sheet with parchment paper.
-Core the stem from the pepper, slice the pepper in half, then slice each half into 3 equal parts. Each pepper will create 6 “chips”. Place the bell pepper chips on the prepared baking sheet with the insides facing up.
-In a large skillet, stir Bell Pepper Chips, Bell Pepper Nachos, Pepper Nachos, Avocado Yogurt, Low Carb Appetizer, Turkey Tacos, Yogurt Dressing, Low Carb Appetizers, Bell Peppers

Here’s what you need for 3 portions ✨
1 lb shrimp (chopped) 
1 green bell pepper (diced) 
1 red bell pepper (diced)
1/4 onion (diced) 
1/2 jalapeño (diced) 
3 garlic cloves (minced) 

Seasonings 
1.5 tsp adobo seasoning 
1 tsp cumin 
1/2 tsp chili powder
