Ingredients For the kebabs: • 1 kg mince meat (with 10-20% fat) • ½ medium onion (crushed, optional) • ½ cup fresh coriander (chopped) • ½ tsp salt • ½ tsp black pepper • ½ tsp red chilli powder • ½ tsp coriander powder For the biryani: • ⅓ cup oil or ghee • 3 tbsp ginger garlic paste • 1 biryani masala packet • 1 cup crushed tomatoes • 1 cup yoghurt • 4 cups basmati rice (washed and soaked) • 8 cups water For garnish: • 1 onion (fried) • 1 tsp saffron soaked in water • ½ cup cashews (optional) • Fresh coriander Instructions 1. Parboil the rice until firm but cooked, then drain and set aside. 2. Mix all the kebab ingredients, shape into small logs, and refrigerate for 30 minutes. 3. Heat ghee in a pan, fry the kebabs until half-cooked, and set aside. 4. In the same pan, fry onions until golden. Add ginger garlic paste and biryani masala, cooking for 2 minutes. 5. Stir in the yoghurt and crushed tomatoes, cooking until the oil separates. 6. Add the kebabs back to the curry and simmer for 5 minutes. 7. Layer the rice over the kebab mixture. Top with fried onions, saffron water, cashews, and coriander. 8. Cover and steam on low heat for 15 minutes.
