Ingredients: 1 1/2 cups Cherry tomatoes; 1/2 cup Cucumbers; 1 Clove Garlic; 1 tbsp Herbs or a mix of parsley; 1 Lemon, slices; 1/2 tsp Oregano; 1 Red onion or shallot peeled and thinly sliced (approx 1/4 cup), small; 1/4 cup Kalamata olives; 2 Pepperonicini peppers; 1 Salt and pepper; 1 Sumac or paprika; 1/4 cup Olive oil; 1 Pine nuts, Toasted; 2 cups Hummus store bought or homemade (my homemade recipe is so creamy and delicious)
