I came up with this simple, basic idea by giving a twist to the presentation of sweet bread, and with the dulce de leche filling, it’s SUPREME! RECIPE FOR 20 MUFFINS Sponge: • 1 1/2 cups flour • 2 tablespoons fresh yeast (or about 1 packet of dry yeast) • 1/2 cup water (or milk for a softer texture) Dough: • 2 1/2 cups all-purpose flour (0000) • 2/3 cup sugar • 1 teaspoon salt • 2 eggs • 1/2 tablespoon honey • 1/2 cup butter (1 stick) • 2 teaspoons vanilla essence (or sweet bread essence) Preparation: 1. Place the flour for the sponge in the middle of the counter, and form a circle (well) using a glass. In the center, add the yeast and water. Gradually incorporate the flour into the mixture until you get a uniform dough. Cover and let rise for 45 minutes 💛. 2. For the dough, form another well with the flour, and in the center, add the remaining ingredients. Let it rest. Once the sponge has doubled in size, mix it with the dough until a uniform dough is achieved. At this point, incorporate the chocolate chips (I used approx. 1 1/2 cups of semi-sweet chocolate chips). 3. Divide into 20 equal balls and fill each with dulce de leche. Baking: Bake at 340°F (170°C). The key is to NOT open the oven during the first 15 minutes, then poke with a toothpick until it comes out clean.  In a separate lg. bowl, beat the butter, shortening & brown sugar together, with an electric mixer on med. speed, until light & fluffy. Beat in the egg until incorporated. Beat in the vanilla, then molasses until well combined On low speed, beat in the flour mixture just until combined. Set aside 1/4 of the dough for the mini cookies. Form it into a disk. Divide the remaining dough into 2 portions, form into disks. Wrap all of the disks with plastic wrap and chill in the fridge until firm, at least 2 hrs or overnight
