madeleine on Instagram: "CREAMY PEANUT MISO RAMEN 💥🍜 a revisit to one of my favourite recipes and most viral video ever 🫡 Ingredients: Noodles - ramen noodles, udon noodles, or even just cheap packet noodles will all work a treat here Smooth peanut butter (or any nut butter you have in your cupboards) Miso paste Sesame oil 1 tsp grated ginger 1 tsp grated garlic Chilli flakes Veg stock + optional soy sauce 200ml coconut milk Pak choi Chilli oil Toppings include: fresh coriander, charred sweetcorn, diced spring onion & sesame seeds Recipe: Gently fry garlic, ginger and a sprinkle of chilli flakes in a little sesame oil - normal olive oil is also fine. Meanwhile mix together 1-2 tbsp nut butter and 1 tbsp miso paste, loosen with a little hot water to make a smooth consistency

Way back before the pandemic, we used to have an office in central London and opposite the office was a Pret-A-Manger. Every Tuesday was soup day at Pret and once a month, the soup of the day was Pea and Mint. Dice up your favourite veggies & get them into a pan with salt, pepper, garlic & thyme 3. Use two forks to shred your chicken breast and add to the veggies 4. Add in your fave or homemade chicken stock - add more salt if it isnt seasoned 5. Blend up half 6. Then add a noodle nest or cook separately 7. Plate up with bread and butter, top with lemon juice, pepper, parsley, spring onion & cream! #chickennoodlesoup"

Serves 2: 2 tins of chickpeas 1 tin of plum tomatoes 1 stock cube 1 tbsp tahini (plus more to serve) 1-3 tbsp harissa 3-4 large sun dried tomatoes 1 tbsp toasted sesame seeds (optional, to serve) Blend the tinned tomatoes, sun dried tomatoes, tahini, one tin of chickpeas and 1-2 tbsp harissa if using, in a high speed blender until smooth. Add that to a pot and full one tin with water and add that to the pot too, along with the stock cube. Just the best super rich veg flavor with that smoked paprika and coconut milk! Slice off the top of the head of garlic. Place the bell pepper (skin side up), carrots, cauliflower, tomatoes, garlic and onion to a sheet pan. Drizzle with olive oil & spices.
