Chocolate peanut bars Ingredients: BARS 1 1/2 cups light Karo syrup 1 cup each sugar and brown sugar 1 cup peanut butter 7 cups Corn Flakes( 18 oz box makes 2 batches) 1- 12 oz can of peanuts. TOPPING 2 cups(12 oz) choc chips 3 TBS peanut butter 2 TBS Shortening 1. Chop peanuts using Food Chopper 2. Crush cornflakes( I crush with my hands) 3. Add peanuts and cornflakes to large bowl. Mix well 4. In a 3 qt. Saucepan combine corn syrup and sugars. Bring to a boil over medium heat and stir for 1 minute. Remove from heat. Add peanut butter. Mix well. 5. Pour over cornflake mixture. Mix well. I use a silicone mix and scraper. Work quickly. 6. Press into a large bar pan ( or jelly pan-- large cookie sheet or 2- 9*13 inch pans)that have been sprayed with Pam.{ I spray parchment paper and put it on the paper} Flatten with roller or use back of silicone mix and scraper. 7. TOPPING. In microwave (30 seconds at a time) or double boiler melt chocolate chips, peanut butter, and shortening. 8. Pour and spread over bars. 9. Refrigerate 2-3 hours until set. 10. Remove from pan. Let sit for about 10 minutes and cut into bars or small pieces. 11. Refrigerate until serving.
