Then fry the fish on both sides, remove the fish,the same pan add 1 onion chopped, 2 minced garlic cloves, 1 cup chopped carrot, 1 cup chopped capsicum, and 2-3 Bay leaves,stir for 3-4 minutes, and transfer into a bigger pot then add 3 cups rice (Washed and soaked 25-30 minutes) Add 5 green chillies and 1 dry lemon, pour 6 cups water ,then add salt and chopped coriander leaves mix well,allow to boil then reduce flame on low heat and cook for 15 minutes ,after open the pot mix gently, arrange the fish on top then cook another 5 minutes . I too love it but the frying part is the toughest and it kills the appetite (Atleast for me) plus lot of oil that gets used which can be avoided I tried roasting /baking onions and they turned out fantastic! And no trace of oil. Just as how shared in this reel If you are concerned about usage of power, then you certainly have the option to fry or as whatever suits you. I am glad that I could get no oil birista and that really matters in my biryani making process Every oven works differently so what I am sharing might be different result for you in terms of time and browning. You can toss the onions more than once just to get even browning. Few bits and pieces that might be still moist and not browned, can be put back in the oven while it’s switched off. 974K views · 56K reactions | Masaledaar Mutton Biryani ✨ For the mutton gravy- 🔸1 kg mutton 🔸1/2 cup oil 🔸2 bay leaf & cinnamon stick 🔸2-3 green cardamom 🔸4-5 peppercorns 🔸2-3 cloves 🔸1 black cardamom 🔸3 medium sliced onion 🔸2 tbsp ginger garlic paste 🔸1 tsp kashmiri red chilli powder 🔸1/2 tsp tumeric powdwr 🔸1 tsp coriander powder 🔸1/2 tsp garam masala powder 🔸1 tsp meat masala (optional) 🔸1/2 packet biryani masala powder 🔸salt- to taste 🔸3/4 cup curd 🔸chopped coriander leaves 🔸2-3 slit green chillies Heat oil, add in whole spices along with sliced onion, let it turn golden brown, add in mutton, sauté till mutton changes color & add in ginger garlic paste. Sauté till the raw smell goes & add in powder spices along with biryani masala powder, mix & add in curd, mix everything, add water if required & cook till mutton is done. For the rice- 🔸Water 🔸800gms/ 4 cups basmati rice washed & soaked for 30mins 🔸Salt 🔸Whole spices- cumin seeds, bay leaf, cinnamon stick, black peppercorns, cloves & green cardamom 🔸2 tbsp lemon juice 🔸4-5 green chillies Add in salt, whole spices, lemon juice, green chillies to enough water for the rice to boil & cook. Water should be salty enough. Once the water starts boiling, add in rice & cook till the rice is 90% done. Strain & set aside For layering- 🔸4-5 prunes/ dried plums (optional) 🔸chopped Coriander leaves 🔸sliced green chillies 🔸Few fried onion 🔸3-4 tbsp ghee 🔸Food color (optional) Add the prunes to the mutton gravy along with coriander leaves, green chillies & few fried onion. Layer half of the cooked rice on top of mutton gravy. Again add in few fried onion, green chillies & coriander leaves & remaining of the mutton gravy, layer the remaining rice on top, add in food color along with ghee, then seal the pot & place a tawa below the pot, cook on high flame for 5-7mins & then lower the flame & cook on dum for 20-25 mins, switch off the flame & let it stay like that for 10mins before opening the pot.
