Anny Wiebe on Instagram: "Had a couple questions asking for a slower version of how I shape my loaves. This is how I’ve been doing it pretty much since I starter! I dump my dough onto the counter, weigh them out to 1000 grams and preshape. After about a 20 minute rest the top has dried a bit so it doesn’t stick to my table as much. Then I’ll shape and place in my banneton that I’ve floured with rice flour. (Best thing to use to keep them from sticking!)
