Brown 1 lb of breakfast sausage in a skillet over medium heat. Once fully cooked, drain it on a paper towel lined plate. Set aside 2 tbsp for later use. Open an 8-count package of homestyle biscuits and cut each one into 9 pieces. Place those into the bottom of a greased 9x13 baking dish. In a bowl, whisk together 8 eggs with 1/4 cup of milk and season with salt and pepper and some cajun seasoning (optional). Now pour the sausage over the biscuits in the baking dish. Top that with 2 cups of grated cheddar cheese. Pour the eggs over the entire dish
