This one along with the strawberry filling was the filling for my son's cake and it's simply the best. Come and learn. Here I have 700 grams of some sweet chocolate but this is a noble chocolate, not fractionated coating, okay? I put in the microwave to melt every 30 seconds until it's smooth and beautiful. If you don't have a microwave, no problem. You can do the same process in the Bay Marie. Just be careful not to get any water in here, okay? Add 300 grams or one and a half carton of heavy cream. It's important that this cream is at room temperature because if it's cold, it could spoil your chocolate, okay? Mix these two very well and you get this ganache. Look at it. Very shiny and very pretty. But it doesn't stop here. We need this filling to be more irritated. To be lighter and for that, we're going to do the second stage. I'm going add 300 milliliter of really cold whipping cream. And I'm going to add two tablespoons of chocolate powder. To break up the white of the whipping cream, okay? I've mixed it and I'm going to whip it until it's like this. Look at it. Very creamy. It's very quick. There you go. Look. Don't let it get too hard, okay? It's creamy. That's the point. Now, we'll add the whipped cream to the chocolate. Another important tip here is to make sure your chocolate is already cold so you can add the whipped cream. Otherwise, it will melt all your whipping cream here and it will just turn into water. So, leave your chocolate the corner for it to cool down. Don't put in the fridge either. So it doesn't get hard. Leave in the corner to cool down. When it's cool down, add your whipped cream and mix the two together very well. It will look like this. Oh my. Super creamy and beautiful to look at. If you want, you can use it to fill your cakes. If you're going to press them, okay? If you're not going to press it, leave it overnight. Mine ended up staying here in the fridge because we ended up leaving a bit longer because I was going to fill my son's cake and I needed a bit more time. So it went into the fridge.
