In parts of China and Southeast Asia, the Lunar New Year is celebrated with a Prosperity Toss (or Lo Hei). A salad filled with symbolic ingredients is tossed with chopsticks and New Year greetings are shouted simultaneously. It is believed that the higher the toss, the greater the fortune that will follow. At The Ritz-Carlton, Millenia Singapore, chefs from the one Michelin star Summer Pavilion restaurant have created a specialty Yu Sheng salad with suckling pig, black caviar and jelly fish.
